Cold, snowy morning?
First, put the kettle on, it's cold out there.
Now you're wanting something fresh baked to munch on. Perhaps something as easy as a muffin, but with the light yeasty texture of a dinner roll and the buttery, crispy edges that come from backing in a tin?
Yeast Muffins. They were easy, on the table in 30 minutes. They are also aerodynamic (don't ask, but due to a problem with the oven shelf, a few of the muffins were lost on re-entry) .
Directions:
Mix 1 and 1/8 teaspoons active dry yeast (half a package)
1 cup warm water (about 110 degrees)
Let stand 5 minutes while you preheat oven to 400 degrees F.
In a small bowl mix:
2 cups self rising flour
1 Tablespoons plus 1/2 teaspoon sugar
Add yeast mixture to flour mixture and stir in:
6 Tablespoons salted butter, melted
1 small egg whisked (if you use an extra large or jumbo egg, remove about a teaspoon of the egg mixture)
Batter will be slightly lumpy
Spoon batter into 6-8 lightly greased muffin tins(depending on how big you wish them)
Bake in preheated oven about 20-23 minutes until lightly golden
Serve with butter, honey or preserves and some hot infused tea to drink ( for that husband who shoveled not just your sidewalk and drive, but also that of the Veteran in his 60's who lives next door.)
