Once in a lifetime friends leave you several pounds of Amish Bacon  from Beef Mart in your freezer
The best bacon ever, but it just called for pancakes.  

 Light and fluffy with a crispy edge and a taste like sourdough.  
These were a yummy experiment when we were out of milk Sunday morning. 
After an afternoon refinishing and painting the porch rail, Partner took Abby around the neighborhood, where they went to a garage sale, socialized with people and met a little yappy dog without bloodshed (though Abby bought a jigsaw for the shop).  "Mom" stayed home and did chores and food prep for the coming week.

Four pieces of bacon were brushed with a mixture of about a Tablespoon of honey, 1 teaspoon molasses, 2 teaspoons Bourbon and a couple of dashes of ancho and regular chili powder, as they came out of the pan, almost done, then popped under the broiler just long enough to caramelize the sugars and finish cooking. That topped a pound of burger mixed with a teaspoon of McCormick Molasses Bacon Grillmates seasoning, a pinch of crushed red pepper and half of a small onion caramelized in the bacon drippings, the patties then grilled on the barbecue.
